Is it possible to "latch" the arpeggiator so that it continues to play the same arpeggio until another key is hit?

No, you need to insert another note(s) after the one you want to skip.
You could bump the arpeggio a sound-file, and make it shift between positions in audiofileProcessor (AFP)
