I would like to know how to make a note in the song editor fade out. Like is there a way to change the volume of a note partway through the note instead of the overall volume of the whole note?

You must program the volume envelope, and more specifically the decay (DEC) parameter, or the release parameter (REL).

For all LMMS synths (except ZynAddSubFX), see the ENV/LFO > VOLUME tab.

For ZynAddSubFX, the principle is the same, but the volume envelope hides in one of the countless windows ...

D.ipsum is correct, it is controlled in the ENVelope, however there are more instruments that does not have a ENV/LFO tab:
All instruments based on VST and the VST instrument itself, does not have it, simply because VST synthesis does not support it.

Ha yes, I had forgotten the VSTi (which must be loaded through VeSTige).

As MusikBear indicates, VeSTige (host VSTi) does not support envelope, LFOs and filters. To access these options, it depends on the VSTi you want to use and the options it contains.

To return to the fade-out, this can be set via the decay (DEC) or the release (REL) of the volume envelope.
If you want to go further, it is also possible to automate the change of the values assigned to these parameters according to the time (via automation track), which makes it possible to get closer to the way a musician plays (are you a pianist?)
