I don't know if this is already there, but just wanted to ask: In the Piano Roll, can we select custom notes, together?
(Like, in a word document, you can hold control and select different words, together. Can we do this with the notes in the Piano Roll?

Not only 'can', but also in several ways!
I think the one you refer to is selection-to-group :

Point to first note, hold ctrl and left-click it : Its selected
Point to second note, hold ctrl & SH and left-click it : Its selected together with first note!
Notes does not have to be adjacent, you can build your own selections just as you like

For selecting a 'sentence' you can just use the select-tool: 3. from left
