Yes, you need to use automation-recording to do what you want
First the dial you want to automate, must be connected to a automation-track, and then you can right-click a block in the automation-track. Here you select Record
All manual movement of the dial, will now be inserted into the block in the automation-track, in synchronization with the movement of the play-head
