Samples of tracks continue to play the same length after I have shortened the sample by either dragging it or cutting it! I've stopped playing and startted from the beginning and even saved project, closed application, went back in and played it again with same issue.

You wrote "Samples of tracks", and i suspect you mean Sample-track

You do not tell us how long your sample is, but As we also write in that chapter, you should choose AudioFileProcessor for samples from a few ms to ~ 45 secd.
In AudioFileProcessor you not only have real envelopes, you also have full control over start and end-points
but if it is longer than one min, you should use Sample-track. You will however have to use a program like Audacity to trim the sample to the size you want, ot you can experiment with note length, as GPS suggests, but often you will get an unnatural 'exit' of the sample, in that case you could use a fade in volume, if it fits in the project.
