How can I make audio sample tracks sound less choppy?

I've been using the sf2 player to compensate for my inability to own/play several instruments, but the result always ends up sounding weird. The samples themselves sound fine, but for some reason it very evidently sounds weird.

How can I remedy this to make it sound more realistic? Do MIDI keyboards help in this regard? I have a keyboard with MIDI output and input, but I can't use it because the cheap midi to USB cables won't register input properly, and I can't find the more expensive one anywhere near me.
