I'm wondering, how can I check what the output levels (in decibels) are in LMMS?

in your FX library you have a spectrum analyzer
you can monitor the dB for the channel you insert this analyzer in, and you can have spectrum analyzers on any instrument or channel -also Master.
- a more advanced alternative is the vst monitor SPAN
