I've learned that I can activate arpeggios in the 'FUNC' tab of any virtual instrument;
and if I press two keys on a midi-keyboard it will produce the selected type of arpeggio for each key.
Is it possible to make it so pressing two or more keys will instead produce a single (modified) arpeggio?

Yes. This is what "Sort" mode is about ( 'FUNC' tab/drop down menu, bottom left).

you can even make arpeggios with chords. You can do that, this way:
