In using Vestige, am I supposed to be loading a VST in to it, or a music sample?

Okay.

Vestige is for loading Vst's.

SF2 Player is for loading Sound Fonts.

Audio File Processor is for loading samples.

in fact, you are supposed to load a dll into the VST-stub.
