I got the generaluser soundfont but I'm not really sure what its purpose is. Does it exist to playback MIDI files and if so, how does this work? I had thought that you use GeneralUser to play different instruments, but lots of people say its to use MIDI Files?

I'm just confused at this point

No, it just has all midi-instruments exactly as your midi-hw-card.

On the plugin-page, You see this picture:

In the middle it has a dropdown named PATCH
Here you can select between every midi-instrument, but you also have percussion BANKS and that will allow you to distribute percussion over all your keys on kb.
