Surround sound features

SInce I asked about stereo switching - and had a response - is it also possible to do surround sound manipulations? For example rotate a 5:1 or 7:1 soundfield? It also looks as though there are Ambisonics plugins, so maybe it's possible to do things with that too? If so, is it also possible to get a feeling of height?
